# Various kinds of Seitan.

  * Seitan

This is the stuff which is cooked in the broth with some flavours.
Some are soft, some are more chewy. It depends on the flour quality and making method.

* Kofu

This is the form of wheat gluten which is steamed, deepfried and cooked. To make Kofu takes more time and work, but it has very good taste and texture.

* Fu

In the wheat protein products this is most popular in Japan.
but mostly this Fu is quite soft, and does not feel like the same wheat gluten stuff.
