How to make Gomashio

Gomashio is one of the basic stuff for the macrobiotic cooking.
Basically you will put it on the brown rice,
but you can use it whenever you use salt for anything.
Let's make gomashio.


Ingredients

Black Sesami .....................8 big spoons(mountainful)
Natural salt .......................2 big spoons

You will measure sesami mountainful of the spoon, and salt flat for the spoon.

Put salt in the warmed pan, and roast itby the small fire, untill its colour becomes a little different.

Put salt into Suribachi, and make it like snow powder. Make thingi of 5-6 toothpicks with scotch tape,take salt out of suribachi.

Warm the pan, put sesamiof 3-4 big spoons, roast them with middle fire. When it makes sounds, put the rid lightly(*1) for a while.

When they are crashed by the fingers, and become fragrant, let pan out of fire.

Put 5 into 3, and grade lightly.(*2)

(*1)Otherwise sesami become like pop corn.

(*2)if it is too strong, then it become oily.
